Yakitori translates to “grilled bird” in Japanese. It is a popular dish of bite-sized chicken pieces skewered on bamboo sticks, cooked over a traditional Japanese grill. The use of binchotan, specialised Japanese charcoal, imparts a delicate smokiness and tender texture that is characteristic of authentic yakitori.
In Japan, specialised restaurants focus on yakitori omakase, where guests entrust the chef to select and prepare a meal. Traditional Japanese grill that uses charcoal to deliver consistent heat, perfect for achieving the ideal sear on yakitori.
Binchotan

Shio
A simple salt seasoning for yakitori, used to draw out the naturally rich flavours of chicken with a clean, savoury taste.
Tare
Umami-packed glaze for yakitori, blending soy sauce, mirin, sake and sugar to create a sweet-savoury glaze that deepens the flavour of grilled chicken.
